Indian food is not all 'curry' - it is a rich and varied fare of many traditional culinary styles. North Indian cooking is now popular throughout the world - Succulent kebabs of chicken, fish and meat with a subtle blend of spices and yoghurt roasted over live charcoal in a Tandoor (a traditional Indian clay oven) - Biryani, a fragrant dish of Basmarti rice, green spices and meat. The East boasts of another distinctive cuisine with seafood as its pride. In Goa, on the western coast, one finds a marvellous blond of Indian preparation of various meats. In the South, milk and coconut adds a creamy richness to the wonderful fish curries. Thus, although being varied, Indian cuisine is simple, satisfiying and most important - worth a try. |
